Le Domaine Jessiaume est un créateur et un fournisseur de vins de Bourgogne de grande qualité depuis près de deux siècles. Le domaine a été fondé en 1850 par la famille Jessiaume et a depuis été racheté par le Dr Jean-François Le Bigot, qui a fait entrer la cave dans une nouvelle ère de viticulture à intervention minimale.
Numerus Clausus ("nombre fermé" en latin) est élaboré en quantités limitées, à partir des plus vieilles vignes du vignoble Les Gravières. Ces 80 années d'expérience confèrent à ce vin un caractère incroyablement nuancé. Au nez, on découvre de profondes senteurs de terre, ainsi que d'agréables notes de baies sauvages du bocage, notamment de mûre et de framboise. En bouche, le vin est parfaitement équilibré entre un corps riche et une acidité filandreuse, avec une finale longue et puissante. Au fur et à mesure que le vin s'ouvre, on peut également découvrir des notes de menthol, de réglisse, d'herbes et de minéraux. Il s'accompagne d'une tranche de fromage affiné, d'un bœuf braisé ou d'un plat d'agneau rôti riche et herbacé.
La cave est le plus grand propriétaire du vignoble Premier Cru "Les Gravières" à Santenay, avec plus de 3,8 hectares de sol fertile et riche en minéraux à récolter.
