Les vins de Bessa Valley
Histoire
Le comte Stephan von Neipperg, propriétaire de plusieurs domaines bordelais importants comme le Château Canon La Gaffeliere et La Mondotte, est tombé amoureux de la charmante vallée de Bessa en Bulgarie et est devenu l'un des pionniers de la région pour les vins de style bordelais. Le domaine a la chance d'avoir des sols argilo-calcaires exceptionnels et l'influence rafraîchissante des montagnes Rhodopes voisines et de la rivière Maritsa qui aident à modérer les températures estivales chaudes.
Au total, la propriété compte 140 acres de vignes qui sont plantées de Merlot, de Syrah et de quelques autres cépages bordelais clés. Ce Cabernet percutant est une excellente introduction à leur style maison typique avec beaucoup d'exubérance assortie d'élégance et d'équilibre. Après la vinification, le jeune vin est vieilli en fûts de chêne français pendant un an pour ajouter une complexité et un polissage supplémentaires.

Bessa Valley est située sur 250 ha, dont 140 ont déjà été plantés.
Le projet a démarré en 2001 en achetant des terres à environ 800 personnes dans la région du village d'Ognianovo (région de Pazardzhik).
Seulement des bâtons d'acacia sont utilisés pour soutenir la vigne.
La cave a une superficie de 3 555 m3 et une capacité de 2 500 barils. Bessa Valley Winery utilise uniquement des barriques en chêne français. Chacune coûte environ 570 € et n'est utilisée que trois fois. Après la troisième utilisation, les barriques cessent d'influencer le vieillissement du vin.
La fermentation alcoolique et la macération ont lieu pendant environ 30 jours.
