Les vins de Papari Valley
Histoire
L'établissement vinicole de la vallée de Papari est nommé d'après le mot géorgien signifiant "crinière de cheval" en l'honneur des collines ondulées de la vallée où poussent leurs vignes. Au total, ils ont 93 hectares plantés de cépages indigènes qui sont cultivés de manière biologique.
Une fois dans la cave, les fruits sont fermentés à l'aide de levures sauvages et fermentés dans de grands pots en argile appelés qvevri qui seraient utilisés ici en Géorgie depuis l'Antiquité.
